Beetroot / Red Beet
Beta vulgaris
Betacyanins (betalains) from red beetroot show anti-cancer activity against colon, lung, stomach, breast, and nerve tumours. The Gerson Therapy features beetroot juice as a central detoxification component. Beets also improve oxygenation through nitrate-to-nitric oxide conversion — critical since tumours thrive in hypoxic environments.

Fresh Beetroot Juice
250 ml freshly pressed beetroot juice daily (blend with carrot, apple, ginger). Core component of Gerson Therapy juicing protocol.
Roasted Beets
Eat 1–2 roasted beets daily in salads. Less potent than juice but still beneficial.

Cautions & Interactions
- Beeturia (red urine/stool) is harmless
- High oxalates — caution in kidney stones
- May lower blood pressure
- High sugar content — monitor in diabetics; use in combination with low-glycaemic foods
